It's a bit late now but I mocked mine up in cardboard first to see how it worked and still nearly came a cropper fitting the cool box. There was enough space for it to fit it in but barely enough to manoeuvre it in there.

As one who drives a highly inflammable vehicle I should point out those coolboxes get quite hot in use - especially those with built in 240V transformers. I cut a vent panel in the cupboard door in the van as it really was getting warm in there.
I've got butane in the van cooker but I do use one of those cartridge jobs for making tea in the car and the can seems to last ages - a half dozen or so can be stashed quite easily if you go down that route for simplicity.

There is quite a lot of cooling around the coolbox as the back is open where the door was and it has a 100mm hole at the front to allow the plugs to be swapped. I will bung some extra holes in the side as well, as today I fitted the leisure battery and the rest of the main electrics. Would it be worth fitting a little fan in there as well ?

Might be worth a fan but its probably over-kill and might, in the course of its operation, add some more localised heat. As long as there's airflow it should be fine. You'll probably only use the 240v function with shore power in any case - I do take the precaution of turning it off at night as this country's overnight temperatures rarely cause concern about spoiling in a well insulated coolbox.
You've a lot of glass in the vehicle obviously so watch out for reflected or concentrated sunlight on fabrics or liner materials - I've had one conflagration caused by a convex mirror already!

The rear window is having a dark black tint and the sides get a mirror tint . It also has blinds which to make a big difference to keep the temp down in the back. It does have a large grommet in the floor under the front seat so maybe a small fan and some ducting built in there. Mini coopers have a nice little fan for the steering pump which should be good for the job.

Got a bit more done to the hearse last week and will hopefully get the windows done on monday.
Also as I am on a hearse thread who in their right mind would want a Range Rover for their last ride.

Can't remember which thread we were discussing this in but it appears that ratchet strapped on the back of a transit pickup isn't an unusual request for a final ride.
