What is gas-braked? Is it using engine braking?

Point of order. Not a car. ;)

Sounds like the idle valve needs filling with carb cleaner & having the feck shaken out of it a few times. It'll be gummed up with the oil sludge from the crankcase breather.

It's using the gas and brake simultaneously to prevent it from stalling. You can do this with badermatics that won't idle, since your pedal count doesn't exceed your foot count.

I assume that this device of much witchcraftery is what I assume to be a stepper motor bolted to what I assume to be the TB?

Aye, it's a smaller ECU controlled valve that gives a more precise control of the idle speed than using the butterfly. I don't know french stuff but they are sometimes part of the TB & other times separate.

It's not French, I'm afraid. It's a lot worse. It's Magneti Marelli. Which is Italian and means "I just made a cold solder spot because I had to wolf whistle a tasty bird walking by".

Thanks - I used to have to do this with our Ascona estate with its shitty automatic choke.

Needless to say I haven't heard it called that before, "just keep going you bastard", especially when it's slippery.

I'm not surprised you haven't heard it before, I haven't either.

You can do with manuals too, since your right foot is perfectly capable of operating two pedals.
