Or just make sure that their cars have all warning lights, buzzers and driver's airbags removed and replaced with one of those boxing gloves on a coiled spring in the steering wheel hub.....

Why would they insure the car after the accident and not before, if they wanted to commit insurance fraud?

Maybe the insurers cannot be certain of the time of the accident in some cases?
I don't know enough about modern telematics to say but on all of our cars we'd have to inform them unless the police etc. got involved at the time.
