A modern Audi engine is going to be a hell lot easier to get parts for to keep on the road than any old engine. Also being a new shell, it'll need to comply with modern emission regs. So a period correct engine is unlikely to pass and even if it could, be highly strangled.

You can already buy a Quatro with a German engine if that floats your boat.
A British Icon should have a British designed engine, by all means manufacture it in Germany if the UK has ditched the production facilities.

Given that it's unlikely to be a daily driver and may not need to meet emission rules due to the low volumes one of the specialist race engine outfits could probably do something. I think Cosworth is still in business for example.
If not something like an Aston engine might be suitable.
I suspect that it won't be cheap so the cost of a decent engine shouldn't be a deal breaker.

Given that the XJ220 sold far fewer than expected I wonder if there's a stash of blocks or even engines somewhere.
